There are many different cherry varieties, and not all of them are suited for fermentation and distillation.The beautiful ones that I have selected are only cherries known as “kirsch” cherries.

Story time…
Part of the harvest comes from my orchard in Courtemautruy and the other part from the orchard of my friend Pius in the Basel region. He and I were meant to get along: we both pick the cherries in a traditional way… you take a ladder, place it at the bottom of the tree and…aitieuds!(means go ahead in my regional dialect).
