Well, my favorites from the Valais arethe Luizet apricots.
As soon as I come back, the sorting begins: each and every apricot is held in our hands to check if it’s sufficiently ripe (without being mouldy) and to separate the pit from the flesh. Yet again, this is a time consuming but necessary process, to obtain a good quality product that will leave you hooked!
